Lemon Cake

List of Ingredients

275g self-raising flour

100ml oil

300g sugar

1tsp baking powder

1tsp lemon juice or 1 lemon juiced and zested

150g icing sugar


  • Heat oven to 200C
  • Oil loaf tin and line with baking paper
  • Mix flour (275g), sugar (300g), baking powder (1tsp), lemon juice (1/2 tsp), oil (100ml) and cold water (170ml)
  • Pour the mixture into the loaf tin
  • Bake for 30 mins
  • Leave to cool in the tin for 10 mins
  • Cool of wire rack
  • Sieve icing sugar (150g) into a bowl and add a small amount of lemon juice, so its thick enough to pour over the cake

Cook Time: 30 mins

Serves: 1 fresh tasting lemon cake
